Why use Grade B Maple Syrup?

Grade B maple syrup is the darkest commercial grade of syrup and has the most robust flavor. Traditionally the lighter “A” grades of syrup were used for the table as flavoring on everything from pancakes and waffles to ice cream, while grade “B” was used just for cooking.

People have been moving toward the thicker grades of syrup for all purposes, perhaps because of the stronger flavor, or maybe for economical reasons – they can use less of a stronger-flavored syrup. All grades of our maple syrup cost the same.

Whatever the reason, many people have switched to using Grade B maple syrup as their all-purpose syrup.
